These Corn Fritters are super quick and easy to make! They’ll become a regular weekly snack in your household.
What you'll need
280g canned corn kernels
1 ¼ cups Lo-Fo Pantry Plain Flour
1 large egg
1 teaspoon baking powder
¼ cup milk

Process
Step 1
Drain and rinse the corn kernels and add them to a large mixing bowl.
Step 2
Add the flour, baking powder, salt and pepper and stir to coat the corn kernels.
Step 3
Add the eggs and milk and stir until a batter forms. Divide into 8.
Step 4
Heat 2-3 tbsp oil in a large frying pan and scoop the divided batter in to the oil, cooking until golden on one side.
Step 5
Flip each fritter and fry on the other side until golden and cooked through.
