What you'll need
115g butter melted
1 ¼ cups Lo-Fo Pantry Plain Flour
1 teaspoon baking powder
¾ cup brown sugar
2 teaspoons vanilla extract
1 large egg
115g white chocolate chips
⅓ cup dried cranberries

Process
Step 1
Preheat the oven to 160oC and line a square (8x8inch) tray with baking paper.
Step 2
Melt the butter and then add it to the brown sugar. Allow to cool for 2mins.
Step 3
Stir the mixture then add in the vanilla extra and egg, stirring to combine.
Step 4
Sift in the flour and baking powder and stir to form a soft dough.
Step 5
Quickly stir in the white chocolate and cranberries.
Step 6
Pour Mixture into the prepared baking tray and use an offset pallet knife or spatula to smooth the top.
Step 7
Bake in the oven for 25-30mins or until golden brown. Remove from the oven and allow to cool in the tray for 15mins, before removing and cutting into small squares.
