Bubblegum Cupcakes

What you'll need

For the cupcakes

caster sugar

¾ cup caster sugar

butter

¾ cup butter

eggs

3XL eggs

vanilla essence

1 teaspoon vanilla essence

Lo-Fo Pantry Plain Flour

2 cups Lo-Fo Pantry Plain Flour

baking soda

2 teaspoon baking soda

salt

pinch salt

milk

1 cup lactose free milk

For the icing

butter

250g unsalted butter, at room temp

blue food colouring

1 teaspoon bubblegum flavouring

icing sugar

290g icing sugar, sifted

blue food colouring

few drops blue food colouring

Process

Step 1

Preheat oven to 180°C fan-forced. Line a 12 capacity muffin tin with large patty pans.

Step 2

Use an electric mixer to beat together the butter and sugar in a medium bowl until pale and creamy.

Step 3

Slowly add in the eggs, one at a time, beating until combined. Add the vanilla, folding in the mixture with a spatula.

Step 4

Add the baking powder and salt to the flour.

Step 5

Sift half of the flour mixture into the butter and egg mixture and fold. Then fold in half of the milk. Repeat with remaining flour and milk until well combined.

Step 6

Spoon mixture evenly amongst prepared pans. Bake for 18-20 minutes or until cooked. Remove from oven and transfer to a wire rack to cool completely.

Step 7

To make the icing, beat the butter and bubblegum flavouring using a stand mixer and the paddle attachment for 1-2 minutes, or until it is pale and creamy. Add in the icing sugar and beat for another minute or so, or until the icing is fluffy.

Step 8

Add a little blue food colouring and mix until well combined. Continue to add more blue food colouring a little at a time until you reach a shade that you are happy with.

Step 9

Using a piping bag or zip lock bag with a hole cut in the corner and a large star piping tip, pipe icing on each cupcake so they have a decent dome of icing each.

Step 10

Decorate all the Low FODMAP lollies you would like. Each cupcake can have a different combination of decoration.
