What you'll need
225g salted butter, softened
½ cup caster sugar
½ cup brown sugar
4 eggs
1 ½ cups Lo-Fo Pantry Plain Flour
¼ cup cocoa
2.5 teaspoon baking powder
1 pinch salt
For the icing
50g butter, salted
1.5 cups icing sugar
1 tablespoon cocoa
a dash almond milk

Process
Step 1
Preheat the oven to 180°C (356°F) and grease a standard (23x13cm) loaf tin.
Step 2
In a large mixing bowl, cream together the softened butter and the sugars until smooth.
Step 3
Add the eggs and whisk until well combined.
Step 4
Sift in the four, cacao powder, baking powder and salt and mix until a smooth and even batter forms.
Step 5
Pour the batter in the loaf tin and even it out with a spatula.
Step 6
Bake in the oven for 30 minutes or until risen, pulled away from the sides and an inserted skewer comes out clean.
Step 7
Leave the cake in the tin for 5 minutes before turning it out onto a wire rack to cool.
Step 8
While the cake is cooling, make the icing by whisking together all the icing ingredients until smooth and fluffy. Spread evenly over the cake.
