What you'll need
1 ¾ cup (240g) Lo-Fo Pantry All Purpose/Plain Flour
¾ cup (175g) Unsalted Butter, softened
1 cup (240g) caster sugar
¾ cup (180g) Lactose-Free Milk
3 (165g) XL eggs
4 teaspoon (8.5g) Coffee Granules dissolved in 1 tablespoon Boiling Water (15g)
1 ½ cteaspoon (10g) baking powder
½ teaspoon (5g) salt

Process
Step 1
Preheat fan-forced oven to 160°C (300°F), and line a loaf tin with baking paper.
Step 2
Cream the butter and sugar with than electric mixer until light and fluffy.
Step 3
Add one egg at a time mixing until combined.
Step 4
Add half the flour and milk mixing on low speed until combined.
Step 5
Add the rest of the flour and milk, as well as the salt and baking powder while continuing to mix.
Step 6
Add in the dissolved coffee and mix for another 30 seconds.
Step 7
Transfer cake mixture to a lined loaf tin until ¾ full (500g).
Step 8
Bake for 55-65 minutes, or until cooked through.
