What you'll need
For the condensed milk
100g coconut milk powder
½ cup caster sugar
1 tablespoon coconut oil
¼ cup boiling water
For the cake
100g Coconut condensed milk from above
120g butter, softened
¾ cup caster sugar
3 eggs
1 ¾ cup Lo-Fo Pantry Plain Flour
2 ½ teaspoon baking powder
1 pinch salt

Process
Step 1
Preheat the oven to 160°C (320°F) and grease a standard (23x13cm) loaf tin.
Step 2
In a blender, combine the ingredients for the Condensed Milk until thick and glossy.
Step 3
In a large mixing bowl, cream together 100 grams of the Condensed Milk you’ve just prepared, the softened butter and sugar until smooth.
Step 4
Add the eggs and whisk until well combined.
Step 5
Sift in the flour, baking powder and salt and mix until a smooth and even batter forms.
Step 6
Pour the batter in the loaf tin and even it out with a spatula.
Step 7
Bake in the oven for 30 minutes or until risen, pulled away from the sides and an inserted skewer comes out clean.
Step 8
Leave the cake in the tin for 5 minutes before turning it out onto a wire rack to cool.
Step 9
Once cool, drizzle the remaining Condensed Milk over the cake and serve.
