These low FODMAP Jam Drops are super quick and easy to make. They are perfect for lunch box fillers or an every day snack, plus won’t put your gut in a rut!
What you'll need
1 ¼ cups Lo-Fo Pantry Plain Flour
60g butter
⅓ cup caster sugar
4 tablespoon brown sugar
½ cup almond meal
1 teaspoon baking powder
pinch salt
12 teaspoon low FODMAP strawberry jam

Process
Step 1
Preheat the oven to 160C and grease a baking tray.
Step 2
In a large mixing bowl, cream together the butter and the sugars.
Step 3
Add the flours, almond meal, baking powder and salt and combine to form a dough.
Step 4
Divide the dough into 12 and roll into balls. Spread them evenly on the lined tray and use the handle of a can opener or similar to make a well in the centre of each cookie.
Step 5
Add a teaspoon of jam to the well of each cookie.
Step 6
Bake them in the oven for 10 minutes or until golden. Enjoy!
