What you'll need
1 cup Lo-Fo Pantry Plain Flour
180g butter, softened
½ cup caster sugar
¼ cup brown sugar
3 eggs
½ cup lemon curd
¾ cup low FODMAP buttermilk
½ cup low FODMAP self raising flour
1 teaspoon baking powder
pinch salt
For the topping
to serve lemon juice
to serve low FODMAP cream

Process
Step 1
Preheat the oven to 170C and thoroughly grease a standard 2.5L bundt pan.
Step 2
In a small bowl, make the buttermilk by combining ¾ cup low FODMAP milk with the juice of ½ a lemon.
Step 3
In a large mixing bowl, whisk together the softened butter and sugars until light and fluffy.
Step 4
Add the eggs, lemon curd and buttermilk to the bowl and whisk until combined and smooth.
Step 5
In ½ cup additions, sift in the flours, baking powder and salt, whisk between each to ensure a smooth batter.
Step 6
Pour the batter into the pan and bake for around 1 hour, or until an inserted skewer comes out clean.
Step 7
Serve with extra lemon curd, and whipped cream, enjoy!
