These low FODMAP Crumpets are perfect for when your organising weekly meal prep. Dig into them at breakfast, lunch or snacking with your favourite low FODMAP toppings!
What you'll need
1 cup Lo-Fo Pantry Plain Flour
½ cup milk
½ cup water
1 tablespoon water (warm)
1 teaspoon salt
2 teaspoon caster sugar
1 ½ teaspoon baking soda
1 teaspoon yeast

Process
Step 1
In a small bowl, add the yeast with the 1 tbsp of warm water and whisk until combined. Set aside.
Step 2
In a large mixing bowl, add the flour, salt, sugar and baking powder and stir.
Step 3
Warm the milk and ½ cup water together in a smaller bowl.
Step 4
Add the water/milk to the flour mixture and whisk together.
Step 5
Add in the yeast mixture and whisk until the mixture is smooth.
Step 6
Put the mixing bowl in a warm place and cover with a kitchen towel for around 30 minutes or until the mixture has thickened slightly and become frothy.
Step 7
Heat a frying pan to medium-high heat and melt some butter in the pan. Add some 10cm egg rings to the pan, and pour in about 1/3 cup of the crumpet mixture in each.
Step 8
Wait until you can see the signature holes in the tops of the crumpets and they have begun to set, and remove the rings.
Step 9
Using a spatula, flip the crumpets and cook on the other side until slightly golden.
Step 10
Repeat until all the mixture is gone. Enjoy!
