What you'll need

rolled oats

1 cup (130g) rolled oats

flour

1 cup (170g) Lo-Fo Pantry All Purpose Flour, sifted

caster sugar

1 ½ cups (125g) caster sugar

maple syrup

1 tablespoon (25g) maple syrup

butter

⅓ cup (70g) unsalted butter, melted

baking soda

½ teaspoon (3.5g) Baking Powder

cinnamon

1 teaspoon (2.5g) cinnamon

vanilla essence

1 teaspoon (6g) vanilla essence

Process

Step 1

Preheat fan-forced oven to 205°C (400°F) and line a baking tray with baking paper.

Step 2

Combine the flour, oats, sugar, cinnamon and baking powder in a large bowl.

Step 3

Combine melted butter, vanilla and maple syrup in a separate small bowl.

Step 4

Pour the dry mix into the wet mixture and stir until combined.

Step 5

Roll ¼ cup (60g) of oat mixture into balls and place on the lined baking tray. Press down gently on each cookie.

Step 6

Bake for 12-15 minutes or until golden brown

Step 7

Allow to cool before consumption
