What you'll need
1 ½ cups (225g) Lo-Fo Pantry Plain Flour
2 ½ teaspoon baking powder
1 XL (55g) egg
1 cup (250g) Lactose Free Milk
1 teaspoon vanilla extract
½ teaspoon (3g) bicarb soda
½ cup (140g) caster sugar

Process
Step 1
In a medium size bowl, combine milk, egg and vanilla with a whisk.
Step 2
Sift flour and bicarb soda into a separate larger bowl and then stir in sugar. Add in the milk mixture and whisk until combined.
Step 3
Heat a large non-stick frying pan over a medium heat. Spray the pan with cooking spray.
Step 4
Transfer pancakes using a ladle and cook pancakes until bubbles appear on surface then turn over and cook until cooked through.
Step 5
Once cooked transfer pancakes to a plate and cover loosely with foil to keep warm. Repeat with remaining batter, remembering to re-spray the pan before ladling a new batch.
Step 6
Serve with maple syrup or lemon and sugar
