Our low FODMAP Popcorn Chicken is absolutely delicious and is sure to be a crowd pleaser! Prepared in 5 minutes and cooked in 10 minutes, these tasty little treats make a perfect afternoon snack or appetiser before dinner. Made with our world first low FODMAP Wheat Plain Flour, this popcorn chicken is delicious when served with the tasty coriander and mint dipping sauce. What you'll need
For the Popcorn Chicken
300g chicken breast
2 tablespoon Lo-Fo Pantry Plain Flour
1 egg
1 cup (125g) gluten free breadcrumbs
pinch salt
1 teaspoon paprika
for frying canola oil
For the Dipping Sauce
1 handful coriander leaves
1 handful mint
1 zest and juice of 1 lemon
1 cup greek yogurt
½ teaspoon Dijon mustard
1 teaspoon garlic infused olive oil
0.2 teaspoon sea salt

Process
Step 1
Mix salt, pepper, paprika and flour.
Step 2
Dice the chicken into 3cm pieces and toss in flour mix.
Step 3
Dip the coated chicken into beaten egg and toss into breadcrumbs. Set aside on a lined baking tray for 10 minutes in the fridge.
Step 4
Heat canola oil and fry the chicken in batches until golden. Drain remaining oil on a kitchen towel.
Step 5
For the coriander mint sauce: combine all ingredients in a blender and whizz until well combined.
Step 6
Serve the chicken pieces hot with the coriander mint sauce.
